This is one of my favorite pizza recipes. Enjoy!
Thai Chicken Pizza
Pizza crust
¼ cup & 2 Tbs. olive oil
3 Tbs. brown sugar
1 ½ tsp. & 1 Tbs. minced garlic
2 Tbs. Thai Chile sauce
1 cup shredded mozzarella cheese
½ cup shredded provolone cheese
½ cup shredded Fontana or Swiss cheese
2 large onions, thinly sliced
1 ½ Tbs. apple cider vinegar
1 Lb. Skinless, boneless chicken, cut into ½ inch pieces
6 Tbs. chopped cilantro
3 large plum tomatoes, seeded and chopped
Heat ¼ cup of oil. Add the onions. Reduce heat to medium/low and sauté for 25 minutes. Add the brown sugar, vinegar and 1 ½ tsp. garlic. Stir until liquid is evaporated and onions are well glazed. Season with salt and pepper. Cool
Sprinkle chicken with salt. Put 2-Tbs. oil in skillet. Sauté chicken for 2 minutes on medium/high heat. Add 1 Tbs. garlic and sauté for 2 minutes. Add chili sauce and sauté for 1 minute. Remove form heat. Add 3-Tbs. cilantro.
To assemble pizzas: Spread a small amount of olive oil onto crusts. Top crusts in this order: chicken on the bottom, tomatoes, onions and then the cheese. You can use all or just some of the cheese, depending on your tastes. Cook at 425 degrees until cheese is melted and bubbling.
