I’m addicted to this stuff. Unfortunately, I have not been able to find chipotle chilies in adabo sauce in New Zealand. I guess I better save room (and weight) in my suitcase this August!

Smoked Chili Sauce

This makes about 2 cups of hot sauce, enough to last some people forever and others a few short weeks (or days, in our case). Enjoy!

1 7-ounce can chipotle chilies in adobo sauce
2 cups boiling water
3 Tablespoons tomato paste
1 Tablespoon balsamic vinegar, more to taste
2 Tablespoons dark brown sugar

Blend the chilies and water together in a food processor or blender until smooth. Add the other ingredients and blend again.
